Low carb meal

Soup

Roast Califlower soup : Super easy to make and Dennis likes it. Make sure not to add too much water, it will be too diluted.



Breakfast:

Breakfast Mock Cinnabon (low carb)

One minute flax muffin

Deviled eggs

low carb breakfast meatballs

low carb Cream Cheese mulffins : If I do it again, I will cut down the splenda to 1/3 cup. It's a bit too sweet to me.

Low Carb Breakfast Frittata


egg mulfin:
4 eggs, beaten
2tbsp of shredded carrot, 2 tbsp of green vigie (brocolli or zuccini)
a little bit salt, pepper
1/2 cup of cheese.
350 degree bake 15mins.


Dinner:

Zucchini Lasagna

Low carb chilli

Low carb Crab Casserole

CRAB BROCCOLI CASSEROLE  
2 T butter
1/4 c chpd onion
8 oz crab
1/4 t curry
1/4 c cream & 1/4 c water
2 c cooked broccoli or kali-flower
1 c cheddar
xanthan gum (thickener)
1/2 t salt
1 T lemon juice
Preheat oven 350. Grease 1 qt casserole pan and put cooked broccoli in bottom. Sprinkle with cheese. Melt butter and saute onion. Add flour, curry powder and salt. Gradually stir in cream and water mixture. Cook til thickened (may have to add thickener). Add lemon juice and crab. Pour over broccoli. Bake 30 min.
